After the success of his series “what shall we eat tonight”, he returns with Sylvia Gabet legume To the Editions de la Martinière. A new book to reconcile everyone with vegetables. The author proposes from 6 to 8 original recipes for each vegetable to never run out of ideas and, above all, to vary the pleasures. Furthermore, Silvia always provides valuable advice on cooking recipes and above all on the containment of food waste. On the menu of the day? The all-green poke bowl with fish and asparagus ceviche.

Steps to make the Poke bowl:

Recipe for 4 people
Preparation : 15 minutes
Marinade : from 1 hour to 1 night
cooking : 20 minutes

Ingrediants :
• 300 g of fresh salmon (or sea bream)
• ½ glass of salted soy sauce (5 cl)
• 1 glass of olive oil (10 cl)
• ½ glass of sesame oil (5 cl)
• 50 g of roasted peanuts (or sprouted seeds, toasted buckwheat)
• 1 lime
• 2 glasses of white rice (250 g)
• 1 bunch of green asparagus
• 2 lawyers
• 1 sachet of frozen edamame (210 g)
• 1 bunch of coriander
• Salt


1. Marinate the fish: rinse the fillets, dry them between 2 sheets of absorbent paper, put them in a baking dish. Mix the soy sauce, oils and coarsely chopped peanuts. Pour over the fish and leave to marinate in the refrigerator between 1 hour and 1 night, covered. To serve, cut into strips and sprinkle with lime zest and juice.

2. Cook the rice according to the manufacturer’s directions. Cut the base of the asparagus (keep the stems to make a soup) and cook the stems in salted water, steam them or sauté them in a pan with olive oil. Peel the avocados and cut them into strips. Microwave the edamame according to the manufacturer’s instructions.

3. Arrange everything in large bowls or soup plates: on top of rice, asparagus, marinated fish, avocado, edamame and chopped coriander.

The poke bowl is a Hawaiian dish that fishermen prepare with the means available and a constant: white rice. You can marinate all types of cooked or raw vegetables, even legumes and all types of raw fish.

You can replace the green asparagus with 2 bunches of wild asparagus, and the edamame with white beans or boiled chickpeas.
